okay so calling these things "pink" pancakes was a bit of an understatement. (i can only guess what color my sister malissa is comparing this to. :0) i just stared at this batter for a while before i could bring myself to cook up some pancakes.
and then i poured it out and still just stared for a moment.
all in all the pancakes would have been edible if not for their color. there is cinnamon in the batter which almost completely masks any flavor of the beets. they smelled good but i have this thing about food needing to look good in order for me to eat it. this just didn't look so hot me.
on a happy note. i did like the mac n cheese (with cauliflower) from the cookbook. i am going to try some of the sweets now and see how they turn out.
